Winemaking
Picked early, destemmed and cold soaked on skins for 36 hours.

Tasting Notes
very pale, almost clear colour, aromatic white flowers, citrus zest and mineral nose. ripe citrus and white stone fruits on the palate with hints of wild honey and a distinct mid palate of fresh ginger. Firm acids and a clean mineral like texture to finish.

Two Barrels, each form different vineyards, 8 months in 1 Year old barriques

Tasting Notes
Clear pale gold colour, white roses, orange blossom and a hint of honey on the nose. Palate of tangerine, grapefruit and white peach with citrus pith and orange zest adding a pure fresh bitter complexity to the ripe fruit flavours. A neat dry and lean finish with long and lingering flavours.

Whole bunch pressed directly into barrel, naturally fermented and matured in 25% new French barriques

Tasting Notes
Clear pale straw in colour, white peach and honeysuckle aromas. A palate of fine ripe citrus and fresh white peach fruits balanced with a layer of elegant oyster shell and a hint of sea spray, touches of toast and wild honey from the Dargaud & Jaegle French oak barriques where it matured for 14 months. Clean acid and mineral line finish, a fingerprint of the unique decomposed granite soils that define this cool climate region.

Destemmed and pressed directly to barrel, matured for 3 months in old French barriques.

Tasting Notes
Clear rich red hue. rose petal, full red fruit and sweet spice aromas. A full bodied style rose, ripe red fruits, strawberries and cherries, sweet spices of nutmeg, cinnamon & Turkish delight in the background. Clean dry finish with subtle hints of tannin.

Cabernet Petit Verdot
2015

66% Cabernet 34% Petit Verdot. (Single Vineyard)

Winemaking
Fruit destemmed and crushed, fermented on skins for 8 days, then pressed into 33% new French barriques.

Tasting Notes
Rich deep purple colour, aromas of sweet black fruits, tobacco and aniseed. Medium bodied with fresh blue and black fruit characters, mulberries, blackberries and juniper berries balanced with some savoury characters of sweet paprika, tobacco leaf and hints of dark chocolate. Bright vibrant acidity and fine tannins finish the wine beautifully.
